Chef, John T Bailey has showcased his culinary creations at some of the world's most prestigious restaurants and hotels including the Athenaeum Club and Sheraton Hotel Hobart, Palm Meadows Golf Club Queensland, Kosciusko Alpine Hotel, Sydney's Regent Hotel, The Dorchester London and a 'consulting experience' for Raffles Hotel, Singapore.

An ambassador for Tasmania, John promotes local produce in Asian markets as specialist consultant to Lactos, introducing the company's products to leading hotels and restaurants across Asia.
