Dear Lee & John:
When we set out to organise our wedding in Tasmania from Brisbane we were worried about how it would end up.

However, we had nothing to worry about when we were recommended the services of John and Lee Bailey at the Banc restaurant in Swansea. Lee was able to make all arrangements with us over the phone and via email and instantly made us feel confident that everything would be fantastic. When we met with
Lee the day before our wedding, she again instilled us with confidence that
the reception would run smoothly, that the venue would look great, and that
we would have nothing to worry about on the day.

And that confidence was not ill placed when after our outdoor ceremony, rain
meant that our guests, canapes and champagne had to be rushed in indoors by John, Lee and team. It did not even seem to be a hiccup in the plans.

But the big thing that we, and our guests, didn't know, was that the food
would be of a such a high quality. It's the one thing we couldn't test from
Brisbane. Our guests are still talking about the quality of the food prepared by John and in particular that the Oysters (dozen freshly shucked
oysters served with red vinegar) and the steak (Rare Roasted Prime Beef Eye Fillet On Potato Rosti w Wilted Spinach & Huon Mushrooms) were the best they have ever had. We are very thankful for the assistance of Lee and John in making our special day a day that we and all of our guess will remember forever.

Thank you very much for looking after our clients on Sunday, Heinz & Dieter, the meal and service was superb "Compliments John" and our VIP clients were more than impressed I can assure you.

Also Lee thank you for the Swansea International Airport transfers and arranging everything at such short notice it is very much appreciated and you will be seeing us again, we like to look after those who look after us with return patronage, really good food service & people are sometimes a rare commodity in Tassie.

Just a quick note to express how much Helen and I, Melisa and Matthew enjoyed the evening you prepared dinner for us at Avalon.
